Anyone have any ideas of guest houses or B & B's in ireland or scotland?

When we go to Ireland and Scotland, i want to stay somewhere that will give the true feel of living there, particularly out in the countryside but not too far from town, pubs, markets, etc. Any ideas from experienced travelers? I"Ve been looking online but there are so many, how do i choose?
